What is biltong? Biltong (pronounced bil-tawng) is a slice of dried, air-cured meat that originates from Southern African countries like South Africa, Namibia, Zimbabwe, Malawi, and Botswana.
In its description, biltong sounds a lot like traditional beef jerky, but they are in fact, not even close relatives.

How biltong is made
Biltong is simple to make but that doesn’t mean we don’t take the process seriously. To start, you select the meat, typically top round beef sliced into 1″ strips.
Next is the marination and seasoning process. For our Original Flavor, we marinate in vinegar and season with salt, pepper, and roasted coriander. For our Spicy Chili, we add some red pepper. Last but not least, we add rosemary, garlic, and onion for our Garlic and Herb.
After the marination process is complete, the strips are then hung to air-dry in a climate-controlled room for up to 7 days. During that time, it’ll lose more than 50% of its moisture content, giving it its tender texture.
This is also where the main difference comes between biltong and beef jerky. Jerky is commonly cooked for a short period of time, but airdrying meat for days is a key step beyond seasoning that accentuates the flavor and leads to the tenderness of Summit Biltong. While jerky typically contains a smokey taste, biltong has a very distinct meat taste.
The different drying methods also alter the texture of the meat. Jerky contains very little fat giving it a steak-like chew. Biltong can have different textures based on the fat in the chosen cut. Lean biltong will be dry and crumbly, but rich biltong will be soft and chewy.
Once dried, the meat is cut against the grain into thin slices and packaged. Our biltong has a product shelf-life of one year when stored in a cool, dry place.
